BEFORE YOU BEGIN
Sterlize ever item that will come into contact with
your wort (beer-in-the-process) with a solution of sodium metabisulfite
or potassium metabisulfite - two ounces of either for a gallon of
water. These “Sulfites” are reusable up to ten times, but you may also
use B-Brite, a one-time-only sanitizer (which must be thoroughly rinsed
from equipment).
MIXING
If boiling your wort, put one gallon water into
your enameled pot and bring to a boil. Note: Some kits must be boiled;
some say it is not necessary as it has already been done by the
manufacturer. These kits may be boiled anyway, according to your
taste. While boiling the water, remove the paper label (if there is
one) and place the can in hot water for about 5 minutes. This will make
the contents easier to pour.
Follow instructions on the kit. Munton’s for
example, needs 2 pounds of dry malt added to the boil. Others are
complete.
After
adding can contents to pot, return pot to boil and let boil 15-20
minutes (longer will enhance the flavor but boil no longer than one
hour). We recommend 45 minutes. Most kits are pre-hopped, but check
instructions. Note: when the wort first boils, it will foam up,
overflowing the pot and making quite a mess of the stove. To prevent
this, stir often and have handy two pot holders to remove pot from hot
burner. The foam will subside and you can return wort to the burner.
Remember to stir occasionally.
